Crunchy green vegetable stir-fry with prawns: Submitted by: admin | Date Added: 11 Jan 2011

Ingredients

1 onion, thinly sliced
1 fresh red chilli, seeded and thinly sliced (optional)
1 clove garlic, finely chopped
2 spoon sunflower oil
2 courgettes, cut diagonally into 3 mm (1/8 in) slices
100 g (31/2 oz) mangetout, trimmed
75 ml (21/2 fl oz) cold water
85 g (3 oz) cooked, peeled King or tiger prawns
3 spring onions, thinly sliced or chopped
1 spoon chopped fresh coriander, plus extra to garnish
4 tablespoons black bean sauce

Cooking Instructions

Place the onion, chilli, if using, and garlic in the ActiFry pan, then drizzle the oil over the top. Cook for 5 minutes.

Add the courgettes, mangetout and water to the ActiFry. Cook for a further 5 minutes.

Add the prawns, spring onions, chopped coriander and black bean sauce. Cook for 3 minutes. Serve with steamed rice or cooked egg noodles. Sprinkle with a little extra chopped coriander, if desired.

Variations
Use beansprouts in place of mangetout.

Don't be put off by the English terms courgettes (zucchini) and mangetout (I used snow peas); this is a delightful, quick dinner. I also used one zippy serrano for the fresh chili. Left by: Amy Avery (19 Jan 2012)

This is delicious followed it to the letter and it's fab! Amazing if you like prawns and nice veg I did all the 2 green veg and the beansprouts ! lovely very chinese go for it use all the ingredients in fact had it twice in one week to use up the chillies as I can only get them in packs of 3 or 4!
