Seared Scallops with Chipotle-Soy Syrup and Sweet Potato-Onion Homefries: Submitted by: Amanda Brewer | Date Added: 26 Jan 2011

1 pound sweet potatoes, 3/4-inch dice
1 onion, 3/4-inch dice
˝ cup Wanjashan low sodium naturally brewed Tamari
3 tablespoons brown sugar
1 tablespoon Chipotle en adobo, chopped
juice of 2 limes
2 tablespoons canola oil
1 pound day boat scallops, muscle removed
2 tablespoons chopped chives
canola oil, for cooking
Kosher salt and freshly ground black pepper

Cooking Instructions

Combine sweet potatoes and onion.

Season with salt and pepper.

Add 1 tablespoon oil and cook until potatoes are cooked through, about 45- 50 minutes.

Season with salt and pepper. Meanwhile, in a medium sauté pan, add naturally brewed tamari, brown sugar, Chipotle and lime juice and reduce by 75%.

Transfer to a blender and blend on high speed, drizzling in oil.

Wash out pan and dry. On high heat, coat lightly with oil, season scallops and sear on both sides, 4 minutes total.

Place sweet potato and onion mixture on the plate, surround with scallops, drizzle with syrup and garnish with chives.
