Sweet apple and bean curry with optional pompadoms: Submitted by: Kirsty | Date Added: 16 Feb 2012

250g dried mixed beans
1 large cooking (bramley) apple or 3 regular apples, chopped
1 large onion, chopped
2 x 400g of tinned chopped tomatoes
Tablespoon of curry paste
Tablespoon of sweetener such as Canderal, or teaspoon of sugar
Salt and pepper
Cup of hot water
Mangoe chutney (optional)
Branston pickle (optional)

Uncooked pompadoms

Cooking Instructions

Soak the mixed beans overnight as per instructions and then boil in a regular pan until soft (up to 1 1/2 hours)
Add oli to actifry. Once hot add the onions. 5 mins later add the apples. Let fry.
10 mins later add the beans and the tinned tomatos
At the same time add the curry paste (suggest mild one), sweetner and salt and pepper. Mix and then add the cup of hot water and optional chutney and pickle
Cook for 30 mins

Once cooked clean out the Actifry Pan and add a drizzle of oil. Heat for 5 minutes. Then add uncooked packet pompadoms, tree at a time, resting upwards on the central arm. Cook for about three minutes though watching until pompadoms bubble.

Serve with plain yogurt and optional rice and chutney.
