Turkey with Pumpkin and Nutmeg: Date Added: 28 Feb 2016

400 g boneless turkey breast, cut in cubes
12 1/3 oz pumpkin cut into cubes
4 tablespoons maple syrup
1 sliced onion
1 bay leaf
1 sprig fresh thyme chopped
1/2 ActiFry spoo nutmeg
6 ActiFry spoons cherry jelly or cranberry sauce
10 fl oz low-fat chicken stock
1 ActiFry spoon oil
salt and pepper

Cooking Instructions

1. Heat the oil in the ActiFry pan. Add the onion, the seasoned turkey pieces and brown for 5 minutes.
2. Add the maple syrup and let caramelize. Add the pumpkin and nutmeg. Cook all together for 2 minutes.
3. Add the chicken stock and the herbs. Cook for 15 minutes.
4. Bind the sauce with the cherry jelly and cook for another 2 minutes. Serve.
