•1 medium sized chopped onion
•1 crushed clove of garlic (or squeeze of garlic puree)
•1 tablespoon of olive oil or rapeseed oil
•Handful of chopped mushrooms (any type)
•Quarter of a butternut squash, peeled and diced
•100mls of vegetable stock
•1 teaspoon of chilli powder
•1 teaspoon of cumin
•Salt and Pepper
•Half a courgette, diced.
•1 tomato peeled and chopped

Cooking Instructions

•Add the onion and garlic to the Actifry and cook for 2 minutes.
•Mix the spices with the olive oil and add to the onion mixture
•Cook for a further 2 minutes
•Add the diced butternut squash, mushrooms and vegetable stock and cook for 5 minutes.
•Add the tomato and courgette and a little boiling water if the mixture is looking too thick.
•Season with salt and pepper.
•Taste to see if the butternut squash is tender and cook a little longer is necessary,
