Scrambled Eggs Greek Style: Submitted by: Cartimand | Date Added: 8 Apr 2016

Ingredients

Serves 2 (or 1 if you're greedy)

4 free range eggs
Half cup of chopped mixed peppers
Approx 80g of Feta cheese
1 clove garlic, chopped finely
Few sliced olives
Teaspoon olive oil
Teaspoon oregano (optional)
Black pepper to taste.

Cooking Instructions

Break the eggs into a bowl.
Crumble or chop the Feta into small pieces and add to the eggs, along with all the other ingredients.
Add black pepper and the oregano (if you want a slightly herby taste) and mix well.

Pour the olive oil into the Actifry tray and allow it to heat for 2 minutes.
Pour in the egg mixture and cook for 3 minutes.
Open the Actifry and use a wooden or plastic spoon to break up the partly cooked eggs (the Actifry paddle rotates too slowly to produce a satisfying scrambled texture).
Cook for a further 3 minutes, then serve immediately.

Goes really well with Patatas Bravas!

If you like your scrambled eggs slightly more moist, then I just tried adding a couple of tablespoons of natural Greek yoghurt before the second 3 minute cooking phase, and it gave very good results. Shame my uploaded photo doesn't seem to have appeared! Left by: Cartimand (9 Apr 2016)
