Bring festive flavour to your table without heating up the oven. These air fryer gammon steaks are brushed with a rich glaze of honey, wholegrain mustard, and warm clove, sweet, savoury, and utterly

Christmassy. Ready in just 20 minutes, low in fat, and perfect with mashed potatoes, buttered greens, or even in a Boxing Day sandwich. A traditional British Christmas favourite, made quicker and easier in the air fryer.

Ingredients

  • 2 thick-cut gammon steaks (approx. 200g each, not pre-glazed)
  • 2 tbsp clear honey
  • 1 tbsp wholegrain mustard
  • ½ tsp ground cloves (or 2 whole cloves, finely crushed)
  • 1 tbsp apple juice or water (to loosen glaze)
  • Freshly ground black pepper
  • Optional: pinch of cinnamon for extra warmth

Tip: Use lean gammon steaks with minimal brine for best results. Pat them dry before glazing.

Method

Step 1

Prep Steaks: Pat gammon steaks dry with kitchen paper. Season lightly with black pepper (they’re already salty).

Step 2

Make Glaze: In a small bowl, mix honey, mustard, ground cloves, and apple juice until smooth.

Step 3

Preheat Air Fryer: Set to 180°C (350°F) and preheat for 3 minutes.

Step 4

First Cook: Place gammon steaks in the air fryer basket in a single layer. Air fry for 8 minutes.

Step 5

Glaze: Brush both sides generously with the honey-mustard mixture.

Step 6

Finish Cooking: Return to air fryer and cook for a further 6–7 minutes at 180°C until glaze is sticky, caramelised, and edges are slightly crisp.

Step 7

Rest & Serve: Let rest for 2 minutes, then serve with traditional sides or festive leftovers.


Serving Suggestion: Pair with creamy mashed potato, buttered Brussels sprouts, or a simple watercress salad.
