Tender chicken breasts coated in a golden crust of crushed pecans, garlic and herbs, cooked to perfection in your air fryer (or Actifry) with minimal oil. Rich, nutty, and naturally keto-friendly, this dish feels indulgent but is ready in under 20 minutes. Perfect with a simple salad or roasted veg.

Ingredients
- 4 boneless, skinless chicken breasts (approx. 150–180g each), or 600g chicken tenders
- 1 large egg
- 1 tsp water
- 250g (about 2 cups) fresh pecan halves, finely crushed
- 2 tbsp almond flour or fine breadcrumbs (almond flour keeps it keto)
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt and freshly ground black pepper, to taste
- 1 tbsp melted butter or olive oil (for brushing, optional, but adds shine)
Tip: Crush pecans in a food processor or place in a sealed bag and roll with a rolling pin. Avoid over-processing into paste; you want texture.
Method
Step 1
Prep Chicken: Pat chicken dry with kitchen paper. Lightly season with salt and pepper.
Step 2
Make Binder: In a shallow bowl, whisk egg with 1 tsp water.
Step 3
Make Crust: In another bowl (or zip-top bag), combine crushed pecans, almond flour, garlic powder, smoked paprika, ¼ tsp salt, and ¼ tsp pepper.
Step 4
Coat Chicken: Dip each chicken piece in egg mixture, letting excess drip off. Then press firmly into the pecan mix, ensuring full, even coverage.
Step 5
Preheat Air Fryer: Set to 180°C (350°F) and preheat for 3 minutes.
Step 6
Cook: Standard Air Fryer: Place chicken in basket in a single layer (do not overlap). Cook for 12–15 minutes, flipping halfway, until internal temperature reaches 75°C. Tefal Actifry: Remove the paddle (if your model allows). Place chicken flat against the sides of the basket to avoid movement. Cook at 180°C for 18–20 minutes, flipping once halfway manually. Add 1 tsp oil to the base.
Step 7
Optional Finish: Brush with melted butter or olive oil for extra gloss.

Rest & Serve: Let rest 3 minutes before serving.
