Ingredients

  • 2 eggs (I used large free range)
  • 2 English Muffins - Wholewheat make a nice change.
  • 2 Medallions of back bacon - just the eye, none of the fat. (in USA it is called "Canadian Bacon" or "Irish Bacon") Smoked or not as you like.
  • 2 Low fat cheese slices (optional)

Method

Step 1

I prefer my muffins lightly toasted, so I split and lightly toast the muffins (I used the toaster). This is optional.

Step 2

Spray the Actifry Pan with a little oil or wipe over a teaspoon of oil. Remove the paddle and heat heat for a minute or two.

Step 3

Crack the eggs carefully into the pan, taking care none goes into the paddle hole. I didn't but you could use an egg ring if you have one.

Step 4

Put the medallions of bacon into the pan.

Step 5

Cook for about 5 minutes, until the egg yolk is just set to your liking, and the bacon is cooked. Keep the first muffin warm while the second is toasting by putting on the hot lid of the Actifry.

Step 6

Assemble, Muffin, bacon, egg, cheese slice, muffin.

Step 7

Variation: Instead of Bacon pull out the inside of a raw [breakfast] sausage, roll into a ball and pat into a round patty with your hands, a little oil on your hands stops it sticking. Make it as large as will fit in the pan as it shrinks when cooking.
